I don’t know about you guys, but I’m always struggling to come up with fun, tasty and (most importantly) simple appetizers to serve for everything from little dinner parties to big bashes. But when I happened to have ciabatta bread, Feta, cream cheese and sun-dried tomatoes on hand yesterday, I decided it was the perfect opportunity to try out something new on the small-bites front.
Enter this Whipped Feta + Sun-Dried Tomato Crostini. To be honest, I didn’t even know that I liked Feta cheese until a few months ago, but now that I’ve discovered how much I love its tangy taste, I go crazy for any recipe in which it plays a part. Add to that my obsession with sun-dried tomatoes and anything related to toasted bread (plus a bit of indulgent cream cheese), and you have an appetizer-ready recipe in no time flat. Plus, you can make both the whipped Feta and crostini ahead of time, so it’s the perfect pick when you’re on a time crunch.
While the sun-dried tomatoes are the perfect topper for this whipped Feta, there are plenty of other toppings that would be a delicious complement, from fresh cherry tomatoes to roasted asparagus. Whipped Feta + Sun-Dried Tomato Crostini
Servings: 8-10 (recipe adapted from One Little Project At a Time)
6 ounces Feta cheese
4 ounces regular cream cheese
3 tablespoons olive oil
1 lemon, juiced
1. In blender or food processor, combine Feta, cream cheese, olive oil and lemon juice. Blend until combined and creamy. (You’ll need to scrape down the mixture every 20 seconds or so between rounds of blending.)
2. Spread whipped Feta over slices of crostini, then top with sun-dried tomatoes or other topping.
