Recipe Roundup: Homemade Birthday Dinner

It’s almost sad to admit that I went nearly the entire summer without cracking open my trusty ol’ grill, but I finally got to put it in action again on Tuesday night. My mom, niece and nephew came into town to celebrate my birthday, and instead of going out for dinner, I thought it would be nice to cook my own meal at home.

There were a few recipes on Pinterest I had been itching to try, but I had to choose pretty carefully since my nephew is an extremely picky eater. To be safe, I went for a grilled chicken recipe, a twist on classic potato salad and some jazzed up corn on the cob. And considering that my nephew cleared his entire plate and went back for seconds, I think the meal was up to snuff.

Every time I took the first bite of each dish, I would swear it was my favorite, but in the end, I don’t think I could pin down which recipe I liked the best. The potato salad—which had a delicious lemon-buttermilk dressing that I would use on any salad—was surprisingly light and fresh; the Honey Lemon chicken had an excellent mix of flavors; and the grilled corn—even though I had to top it with grated Parmesan instead of Cotija cheese—was mouthwatering with all of that bacon butter slathered on it (yes, I said bacon butter!).

While there are few things I would tweak—like letting the chicken marinade longer and using breast meat instead of thighs—I could definitely see myself using these recipes again (and again).
